Mexiday

It's Friday! What better way to celebrate a hard, work-filled week than with taco salads! We started by browning some ground sirloin.


Once it was nice and browned, it was time for the taco seasoning (thanks Monya!).



And some water,


As the seasoned beef simmered, we prepared the components for the salad. First off lettuce, DUH!


Then it went for a nice ride :)


Next, was Megan's pico de gallo. It starts with some largely chopped onions.


Then some cilantro.


Tomatoes, of course (very sharp knife!).



Some lime juice.


And finally, a touch of sugar.


Let's start assembling the taco salad! First, you'll need a bowl.


Next, some lettuce.


Then some chips, the best chips.


Crush 'em up.


Some of the taco seasoned beef.


Some Uncle Ben's Santa Fe rice.


Megan's specialty pico de gallo.


Some salsa. This is a mixture of Pace hot and medium salsa (with more hot than medium, we like it spicy!).


Some cheese. 


Finally, top it off with some cilantro.


You must be thinking to yourself, what should we have to drink with this wonderful taco salad on Mexiday?! Margarita's of course!! Using Patron's fine silver tequila, 


We couldn't decide on a specific margarita recipe online, so we settled for some of Jose Cuervo's pre-made margarita mix.


We shook the mix with the tequila and served the margarita's over ice with a salted rim!


Finally... it's time to eat!


That went by quickly.


This meal definitely hit the spot, and was well worth the work. When's the next time you're having a Mexiday?
