3 Years Strong

As many of you may know, 2 days ago Megan and I celebrated our 3 year anniversary and I couldn't have asked for anyone else as perfect as Megan. We celebrated by eating out at Dragonfly, a modern Japanese restaurant, serving tapa-style dishes (thanks Beth & Michael for the giftcard!). We gorged ourselves in delicious Japanese cuisine and then made our way 2 blocks down the road to The Gelato Company, where we supported Megan's fraternity while enjoying some delicious Gelato. For our anniversary Megan gave me an amazing gift, a dutch oven!!!


Now, what should I do with my new toy? Pot roast, of course! So I start off with browning some onions.


And the same with some carrots.


Now for the star of the show, a nice large chuck roast. 


I gave it a nice sear on both sides.


All those brown bits in the botton of the pot, what should we do?


Deglaze with red wine of course!


Then I put the meat back in and added some beef broth. Then put the vegetables back in and added some fresh thyme and rosemary.


Then into the oven.


And now the hard part, waiting! I guess I'll clean the kitchen....


After a long wait, it was well worth it, the roast was so tender it was falling apart.



And what better to serve with the roast then.... you guessed it! Potatoes!


After a long 5 hours, it's time to eat!


This was a great way to start off the fall season. I can't wait for more comforting dishes out of the dutch oven as it gets cooler outside!
